Okay, I did end up hosting the annual New Years Brunch. I think I've told you all before that it's my favorite event of the year. Last year I posted the French Toast Creme Brulee. This year you get my cheesy hash browns (which is completely lacking in healthiness, in case you were wondering).
2 pounds frozen hash browns
1 cup chopped onions
1 pint sour cream
2 cups grated cheddar cheese
1 Stick of softened butter
1 can of cream of chicken soup
Mix all ingredients together in a very, very enormously large mixing bowl. mix it up to a uniform consistency.
Put it in one 9x11 pan and one 8x8 pan. Bake it at 350 for 1 1/2 hours until dark brown (not golden brown, DARK brown).
